Make these yummy cookies to have on-hand during labor..or pregnancy..or postpartum..or whenever!! These cookies are packed with protein which make them the perfect energy packing treat!
1 cup Organic Peanut Butter
3/4 cup Honey
1/2 cup Coconut Oil
2 teaspoons Vanilla
2 1/4 cups Quick Oats
6 tablespoons Unsweetened Cocoa Powder
**1 scoop Protein Powder, Vanilla or Chocolate (optional)
1. Combine the first three ingredients in a sauce pan and warm gently on stove top. If you are using raw honey, you will want to be careful to only heat until the coconut oil melts and the peanut butter softens. You don't want to kill your honey! =)
2. Next, add in the vanilla, oatmeal, cocoa, protein powder and stir well.
3. Drop spoonfuls onto waxed paper. Allow cookies to cool completely. Store in an air-tight container.
4. Last but not least, try not to eat them all in one sitting!!
**Note: If you add the protein powder, you may need to add extra coconut oil to keep your mixture wet and well combined.
